Produced from hand harvested and whole bunch pressed Pinot Noir & Chardonnay from the Wairau Valley, Marlborough - Bottle fermented with a minimum of 36 months bottle ageing on yeast lees. Hand riddled and recently disgorged with a 2.0g/L dosage.

Winemaker’s Notes:
A subtle cherry hue with a fine persistent mousse carrying aromas of pomegranate and candied apple. The palate leads a fine mineral persistence with hints of quince and brioche all layered over a fine seam of raspberry sherbet acidity. Extra brut in style, this dry Methode Traditionelle is best enjoyed as an aperitif, to accompany an entree course or paired with a delicate desert.

At the heart of Vilaura is Jascha Oldham-Selak, continuing the proud legacy of the Croatian ‘Selak’ family in New Zealand’s wine industry. His journey began in 2014, while studying Viticulture and Oenology, where his love for Traditional Sparkling winemaking blossomed. In 2018, after years of hands-on experience, he founded Vilaura with a single focus—creating exceptional sparkling wines that celebrate craftsmanship and quality.

Joining forces with Jascha in 2017, Sanne Witteveen brought her own vision to the table, with a background rooted in Dutch hospitality and a passion for winemaking. Since her graduation in 2019, Sanne has carved her path, working across both large and boutique wineries in New Zealand. Her time in Champagne during the 2022 harvest solidified her deep commitment to Methode Traditionnelle, and alongside Jascha, she now leads Vilaura, guiding it to new heights.
